super fudgy and super simple, also she’s FILLED with almond butter and melted choc chips:)
almond joys have always been a personal fav treat of mine so an almond joy in cookie form is just an unbelievable combo queens
THE RECIPE:
yields: 1 cookie
prep time: 10 min
cook time: 10 min
total time (including cooling): 25 min
ingredients:
for the cookie-
1 tbsp almond butter
1 tbsp non dairy milk
1 tbsp coconut sugar
1 tsp maple syrup
a dash of vanilla
2 tbsp almond flour
1/4 tsp baking soda
3 tsp coconut flour
a pinch of salt
1 1/2 tbsp coconut shreds
1 tbsp chocolate chips
for the gooey center (optional)-
1/2 tbsp almond butter
1 tsp chocolate chips
1 tsp coconut shreds
instructions:
*preheat oven to 350 F and line or grease a cookie sheet.
*for the cookie- in a small bowl mix together all of the ingredients for the cookie dough and form it into a ball.
*for the gooey center- press the cookie dough so it’s flatter then in the center add the almond butter, choc chips, and coconut shreds. then form and roll the dough around the center and bake for 10-11 min, let cool for 5-10, and enjoy!
