Thick and Chewy Chocolate Chip Cookies (paleo + vegan)

soft, thick, and filled with chocolate



THE RECIPE:

yields 8-10 cookies

prep time: 10 min

cook time: 13 min

total time (including cooling): 33 min

ingredients

1/3 cup olive oil

1/2 cup coconut sugar

2 tbsp maple syrup

1/4 cup nut or seed butter

1 tsp vanilla

1 cup almond flour

1/4 cup coconut flour

1/2 tsp salt

1/2 tsp baking soda

1/2 cup + 2 tbsp chocolate chips

instructions

*preheat oven to 350 F and line/grease two cookie sheets

*in a large bowl mix together the olive oil, coconut sugar, maple syrup, nut or seed butter, and vanilla

*then add in the almond flour, coconut flour, salt, and baking soda. then add in the chocolate chips

*on the cookie sheet, place the batter evenly into semi-flattened balls. bake in the oven for 13 min, let cool for 10, and enjoy!
