Thin Mint Brownies (paleo + vegan)

yk how we do it around here: brownies are fudgy or they simply do not exist


and besties these brownies are FUDGY fudgy, plus they smell divine and taste like the superior girl scout cookie (imo) in the form of a brownie:)


i did indeed have several of these for breakfast this morning bc they are that good





THE RECIPE:

yields: 9-12 brownies

prep time: 10 min

cook time: 21 min

total time (including cooling): 45 min

ingredients

for the brownies-

1/4 cup melted coconut oil

1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, and let sit for 10 min)

1/2 cup coconut sugar

2 tbsp maple syrup

1/3 cup almond butter

3 tbsp non dairy milk

1 tsp vanilla

1 tsp peppermint extract

1 cup almond flour

1/3 cup cacao/cocoa powder

1 tsp baking soda

1/2 tsp salt

a handful chocolate chips

for the topping-

1/3 cup chocolate chips

1 tbsp coconut oil

a dash of peppermint extract

instructions

*preheat oven to 350 F and line or grease an 8x8 baking tin, set aside

*for the brownies- in a large bowl mix together the coconut oil, flaxseed, coconut sugar, maple syrup, almond butter, non dairy milk, vanilla, and peppermint extract

*add in the almond flour, cacao powder, baking soda, salt, and handful of choc chips and mix until smooth

*pour the batter into the pan and bake in the oven for 21-22 min, let cool for 15 min

*for the topping- in the microwave in 30 second increments, mixing in between, melt together the chocolate chips and coconut oil until smooth. add in the peppermint and spread the chocolate over the brownies, let chocolate harden (may need to place in fridge for a few min), slice, and enjoy!
