White Chocolate Peppermint Brownies (vegan + gf)

If you’re anything like me and you’re missing the heck out of Christmas, hopefully these White Chocolate Peppermint Brownies will give you something to hold onto + some much needed ~serotonin~




THE RECIPE yields: 12 bars

prep time: 10 mins

cook time: 20 mins

total time (including cooling): 40 mins

Ingredients:

2 flax eggs (2 tbsp ground flax, 5 tbsp water mixed and let sit for 10 min) or regular eggs

1/4 cup melted coconut oil

1 tsp vanilla

1/2 tsp peppermint extract

1/2 cup coconut sugar

1/4 cup milk of choice (non dairy for vegan)

1/3 cup maple syrup

1 1/2 cups almond flour

1/2 cup cacao powder

1 tsp baking soda

1/2 tsp salt

1/3 cup chocolate chips (to go in the batter)

1/2 cup vegan white chocolate chips (can sub other chocolate chips, to go on top)

Instructions:

1. Preheat the oven to 350 and grease or line an 8x8 baking dish

2. In a bowl mix together the eggs, coconut oil, vanilla, coconut sugar, milk, and maple syrup

3. Mix in the almond flour, cacao powder, baking soda, and salt. Then stir in the chocolate chips.

4. Spread batter into the baking sheet and bake for 20-23 minutes, sprinkle white chocolate over the brownies and spread evenly over them as they melt, let cool for 10 minutes, and optionally top with grated chocolate/crushed peppermint candies/etc, slice into 12-16 pieces, + enjoy!
