Black Bean Chickpea Soup (vegan + gf)

super creamy and packed with veggies and fiber!



THE RECIPE:

yields 7 ish servings

prep time: 25 min

cook time: 50 min

total time (including cooling): 50 min

ingredients

1 tbsp olive oil/vegan butter

1 medium white onion, diced

a tbsp garlic powder/fresh garlic

1-2 cups chopped fall vegetables (zucchini, bell peppers, etc)

1 tsp cumin

1/2 tsp smoked paprika

1/2 tsp oregano

2 cans black beans, washed and strained

1 can chickpeas, washed and strained

3 1/2 cups veggie broth

a squeeze of a lemon

(top with avocado, cheese/vegan cheese, sour cream, or whatever you want:))

instructions

*warm the oil/butter in a soup pot. add the onions and garlic with some salt and pepper. stir until translucent (5-6 min)

*add in the chopped vegetables and sauté for a couple more minutes. then add in the spices and cook, while stirring, until fragrant

*add in the beans, chickpeas, and veggie broth, stir and bring mixture to a boil

*place the lucky iron supplement into the pot with 2-3 drops of citrus and let the mixture boil for 10 minutes

*then remove the supplement, wash it and dry it, and cover it in the provided protection oil. stir the soup and continue to let it simmer for 10 more minutes

*pour half of the mixture into a blender and blend until almost smooth, then pour it back into the pot and allow to boil for 5-10 more minutes

*remove from the heat, top with your hearts desires, and enjoy
