These surprisingly simple, chewy & delicious bars are as addictive as they are beautiful. I don't have much else to say, but RUN to your kitchen because these babies speak for themselves :)

If you're wondering that's Rachel Mansfield's cookbook in the back because she is a queen, icon, everything I aspire to be, and I was too lazy to move it... whoops


THE RECIPE: yields: 9-12 bars
prep time: 15 minutes
cook time: 20 minutes
total time (including freezing): 1 hr 15 minutes
Ingredients:
For the brownies:
2 flax eggs (2 tbsp ground flax, 5 tbsp water mixed and let sit for 10 min) or regular eggs
1/4 cup melted coconut oil
1/2 tsp vanilla (optional)
1/2 cup coconut sugar
1/3 cup maple syrup
1 1/4 cups almond flour (can sub 1 cup gf oat flour/1 cup blended gf oats)
1/2 cup cacao powder
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
For the cookie dough:
1 cup almond flour (can sub 3/4 cup gf oat flour/ 3/4 cup blended gf oats)
2 tbsp avocado/olive/melted coconut oil
1/4 cup maple syrup
1/2 tsp salt
1 tbsp coconut sugar (optional)
1/4 cup chocolate chips**
For the chocolate top:
1/2 cup chocolate chips**
1 tbsp coconut oil
Instructions:
1. Preheat the oven to 350 and line an 8x8 baking sheet with parchment paper
2. In a bowl mix together the eggs, coconut oil, vanilla, coconut sugar, and maple syrup
3. Mix in the almond flour, cacao powder, baking soda, baking powder, and salt. Spread batter into the baking sheet and bake for 20 minutes, then place in the fridge to cool while you make the dough
4. For the cookie dough: mix together almond flour, oil, maple syrup, salt, and coconut sugar. Then add in chocolate chips. Take out the brownies and spread the cookie dough over the top and set aside
5. Melt the chocolate and coconut oil in the microwave in 30 second increments until smooth, pour over the brownies and spread until they are covered. Place in the freezer for 30 minutes, slice into 9/12 squares, and enjoy!
Notes:
Store in an air-tight container in the fridge
