Cashew Raspberry Fudge (Paleo, Vegan, & No-Bake)

Valentine's Day has just graced us with her presence, but who says we can't have fudge all year long? This AMAZINGLY creamy Healthy Cashew Raspberry Freezer Fudge is to die for🥰, it’s so simple, and the perfect gift for that special someone... or urself : )



My two older brothers (the only siblings I have) devoured this fudge in less than 24 hours... so sadly no it did not see the light that is Valentine's Day, but we it was definitely what we were all thinking about during it.


Good thing it's extremely simple to make and makes clean-up such a small task!!




Cashews are evidently my favorite food!! They're creamy, lucious, and unapologetically nutrient dense. Who doesn't love a good cashew? If you don't, I'm sorry this recipe is not for you (but I have so many other delicious recipes for you to check out) and I'm not sure we can be friends, okay okay don't be silly of course I'm joking... maybe😅




THE RECIPE

yields: 16 pieces

prep time: 5 minutes

freeze time: 30 minutes

total time: 35 minutes

Ingredients: 2/3 cup cashew butter 1/2 cup chocolate chips or 1/2 a (loving earth preferably) raspberry chocolate bar 1/4 cup melted coconut oil 1/4 cup maple syrup Crushed cashews & Freeze dried raspberries (2 tbsp of each to mix in and 2 tbsp for the top)

Instructions: 1. In a large bowl melt together the cashew butter, chocolate, coconut oil, and maple syrup in 30 second increments (stirring in between) until melted, smooth, and combined 2. Stir in the freeze dried raspberries and cashew pieces and pour into a lined 8x8/9x9 pan and sprinkle the extra raspberries and cashews on top 3. Place in the freezer for 30 min-1 hour, chop into squares, and enjoy!! RECIPE NOTES
