with baked oats u can either go to the more gooey-center-lava-cake route or the cake-like-chewy-fluffy texture and these are more of the second option but lemme tell u it WORKS
they also check all of the most important boxes: chocolate✔️oatmeal✔️thick✔️can be easily topped with peanut butter✔️ yea sounds good to me
i’ve been helping out at a kid’s camp this week so i haven’t had time to make myself a nice proper bfast in a hot sec, but these were the perfect thing to get me back in the swing of the best meal of the day:)
THE RECIPE:
yields: 1 serving
prep time: 5 min
cook time: 30 min
total time (including cooling): 35 min
ingredients
to blend together-
1/2 cup gf oats
1 tsp baking powder
2 tbsp/ 1 serving chocolate protein powder (i used @unicornsuperfoods )
1 1/2 tbsp cacao/cocoa powder
1/2 banana
1/2 cup + 2 tbsp non dairy milk
1 tbsp maple syrup
a dash of vanilla
1/2 tbsp ground flaxseed
a pinch of salt
to add in-
1-2 tbsp chocolate chips
instructions
*preheat oven to 350 F and set aside a ramekin
*in the blender blend together the oats, baking powder, protein powder, cacao powder, banana, non dairy milk, maple syrup, vanilla, ground flaxseed, and salt until smooth
*then, using a fork, stir in the chocolate chips. pour the mixture into the ramekin, add more choc chips on top, bake in the oven for 30-34 ish min, top with nut butter or whatever your heart desires, and enjoy!
