Chocolate Chip Cookie Dough Tahini Bars (vegan, paleo, no bake, + nut free)

seriously these bars are just far too easy and far too insanely delicious, rich, and chocolate-filled to pass by

they’re also allergy friendly, they have like 8 simple ingredients, and they use minimal amounts of those ingredients so it won’t hurt your soul to pour them into a bowl;)

THE RECIPE:

yields: 9-12 bars

prep time: 10 min

total time (including cooling): 25 min

ingredients:

for the bars-

1/4 cup melted coconut oil

2 tbsp maple syrup

1/3 cup coconut sugar

1/3 cup tahini (can sub other nut or seed butter)

1 tsp vanilla

1/3 cup coconut flour

1 tsp salt

1/3 cup chocolate chips

for the topping-

1/2 cup chocolate chips

2 tbsp coconut oil

instructions:

*line a 9x9 baking tin (can use a loaf pan if you want thicker bars, freeze times may vary)

*for the bars- in a medium/large bowl mix together the coconut oil, maple syrup, coconut sugar, tahini, and vanilla.

*mix in the coconut flour and salt. then add in the chocolate chips and spread the dough evenly into the baking tin, set aside.

*for the topping- melt the choc chips and coconut oil together in the microwave (in 30 increments, mixing in between) until smooth then pour evenly over the bars and freeze for 15-20 min.

*remove bars from freezer, slice, top with a pinch of sea salt, and enjoy! (best kept in fridge:))
