These are super simple, paleo/vegan/no bake/ w a nut free opt, and they taste like a mixture between a chocolate covered strawberry and the perfect bar coconut chocolate pb cups :))
THE RECIPE:
yields: 17 chocolates/cookies
prep time: 10 min
total time (including cooling): 1 hr 40 min
Ingredients:
For the cookies:
3 tbsp melted coconut oil
2 tbsp cashew butter (can sub other nut or seed butter)
A dash of vanilla
2 tbsp maple syrup
1/4 cup coconut sugar
1/2 cup strawberries chopped (blended smoothly into a purée)
1/2 cup coconut shreds
1/3 cup + 3 tbsp coconut flour
For the topping:
1/2 cup + 2 tbsp chocolate chips
1 1/2 tbsp coconut oil
Instructions:
1. Prepare a baking sheet with parchment paper
2. In a large bowl mix together the coconut oil, cashew butter, vanilla, maple syrup, coconut sugar, and strawberry purée
3. Then add in the coconut shreds and coconut flour
4. Roll and flatten about 1 tbsp of batter into a circle and place it on the baking sheet. Repeat this until all the batter is gone and freeze them for at least 1 hour
5. Melt the chocolate and coconut oil together in the microwave in 30 second increments, mixing in between, until smooth
6. Take the cookies out of the freezer and, using a fork, dump them one by one into the chocolate (tapping the fork against the bowl to get off the excess) and place them back on the sheet, add some more flaked coconut on top, freeze for another 30 min, and enjoy! (Store in fridge)
