Chocolate Filled Granola Cups (Vegan, No Bake, & Gf)

These Chocolate Filled Granola Cups are no bake, vegan, gluten free, & out of this world🤩🌎🙌




THE RECIPE

yields: 24 mini cups

prep time: 10 min

cool time: 30 min

total time: 40 min

Ingredients:

3 tbsp melted coconut oil

1 tsp vanilla

1/2 cup peanut butter

1/2 cup maple syrup/honey

2 cups gf oats

1 tsp salt

1/3 cup pumpkin seeds (can sub other seeds

1/4 cup hemp seeds (can sub chia or other smaller seeds)

A handful of mini chocolate chips (optional)

For the topping:

1/2 cup chocolate chips

1 tbsp coconut oil

Instructions:

1. Grease a mini cupcake tin (can sub reg)

2. Mix together the coconut oil, vanilla extract, peanut butter, and maple syrup

3. Add in the oats, salt, pumpkin seeds, and hemp seeds. Optionally, add in the handful of chocolate chips.

4. Spoon a scoop full of the batter into each cup (recipe makes 24 mini cups) and place in the freezer while you melt the chocolate

5. For the topping: melt the chocolate chips and coconut oil in the microwave in 30 second increments, mixing in between, until smooth

6. Remove cups from freezer and make a small indent in the center of each cup, fill each with chocolate mixture. Place in the freezer for 30 mins, remove, & enjoy!


Notes:

  • preferably store in fridge for up to a week
