These simple, amazing, pop-em-in-yo-mouth bites are unbelievable and I mean, have you tried granola butter? It takes it to the next level!
THE RECIPE: yields: 17-19 mini muffins
prep time: 10 minutes
cook time: 15 minutes
total time (including cooling): 35 minutes
Ingredients:
1/2 cup @kweenandco chocolate granola butter (can sub other nut butter, but this one is nut-free & delish!)
1/2 cup coconut sugar
1 flax egg (1 tbsp ground flaxseed + 2.5 tbsp water, stir & let sit for 10 min)
1 tsp vanilla
2 tbsp maple syrup
1/4 cup milk of choice
1/2 cup coconut flour
2 tbsp cacao powder
1 tsp baking soda
1 tsp salt
1/3 cup chocolate chips
1. Preheat oven to 350 and grease a mini muffin pan
2. In a large bowl, mix together the granola butter, coconut sugar, flax egg, vanilla, maple syrup, and milk
3. Then add in the coconut flour, cacao powder, baking soda, and salt. Stir in the chocolate chips
4. Scoop the batter evenly into the mini muffin pan (recipe makes 17-19) and bake in the oven for 16-18 minutes, let cool for 10, and enjoy! (Preferably w more granola butter slathered on top)
