Coconut Cake (vegan, gluten free, + nut free)

total time (including cooling): 1 hr 20 min ingredients for the cake- 3 1/2 cup gf all purpose flour 1 1/2 cup coconut sugar 2 tsp baking soda 1 tsp salt 2 cup non dairy milk 2/3 cup melted coconut oil 2 tsp vanilla 1/2 tsp almond extract 2/3 cup shredded coconut for the frosting- 1 stick (1/2 cup) softened vegan butter 1 8 oz package vegan cream cheese 1 tsp vanilla 1/4 tsp almond extract 3.5 cups powdered sugar 1/2 cup coconut (for topping)
instructions 1. preheat oven to 350 F and grease two 9 inch cake pans with coconut oil, then place a circle of parchment paper in the bottom of the pan and grease that as well 2. for the cake- in a large bowl, mix together the flour, coconut sugar, baking soda, and salt. then stir in the milk, melted coconut oil, vanilla, and almond extract until smooth. then stir in the coconut and divide evenly amongst the two pans and bake in the oven for 28-32 minutes 3. for the frosting- while the cakes cool, in a medium bowl with a hand mixer whip together the butter, cream cheese, vanilla, and almond extract until smooth. then incorporate the powdered sugar about 1 cup at a time until fully combined 4. assemble and frost the cake and sprinkle some coconut shreds on the outside, and enjoy!
