this bread is extremely fluffy, thick, and simple to make with only few minimal ingredients
what rlly takes this to the next level is the LIMITED EDITION chamberlain coffee and chocolate used to make it (literally could inhale a whole bar of the choc easily) thanks so much to @chamberlaincoffee for sending me these amazing products to try!
THE RECIPE:
yields: 7-9 slices
prep time: 10 min
cook time: 1 hour
total time (including cooling): 1 hour 10 min
ingredients
1/4 cup melted coconut oil
3 large mashed bananas
1/3 cup nut or seed butter (i rec almond, cashew, or sunflower)
1/3 cup coconut sugar
3/4 cup brewed limited edition @chamberlaincoffee
1 tsp vanilla
2 cups gf oat flour (2 cups blended gf oats)
2 tbsp coconut flour
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup chocolate chips
(optional) chopped @chamberlaincoffee chocolate, for topping
instructions
*preheat oven to 350 F and line or grease a loaf pan
*in a large bowl mix together the coconut oil, mashed bananas, coconut sugar, coffee, and vanilla
*add in the oat flour, coconut flour, baking powder, baking soda, and salt. then stir in the chocolate chips
*pour the batter evenly into the loaf pan, sprinkle chocolate chips on top, bake for 55 mins-1 hr, and enjoy!
