Double Chocolate Brownie Muffins (Paleo, Nut Free, & Vegan)

Ya know a muffin is good when it can be classified as both breakfast and dessert:) These DOUBLE CHOCOLATE MUFFINS are fudgy, chocolatey, and amazingg!!




THE RECIPE

yields: 8-10 muffins

prep time: 10 minutes

cook time: 25 minutes

total time (including cooling): 45 minutes

Ingredients:

2 flax eggs

1/3 cup maple syrup

1 tsp vanilla

1/2 cup coconut sugar

1/3 cup olive oil (can sub other oil)

1/2 cup coconut flour

1/2 cup cacao powder

1 tsp baking soda

1/2 tsp salt

1/3 cup chocolate chips

Instructions:

1. Preheat oven to 350 and line a cupcake tin (recipe makes 8-10)

2. In a large bowl mix together the eggs, maple syrup, vanilla, coconut sugar, and olive oil

3. Stir in the coconut flour, cacao powder, baking soda, and salt. Then add in the chocolate chips

4. Fill each cupcake liner 2/3 full and bake for 24-26 minutes, let cool for 10, and enjoy!!
