Double Chocolate Chip Pb Coconut Protein Bars (vegan, gf, + no bake)

these bars are super simple, tasty, and pack a nice bit of extra protein :) they're also the perfect on-the-go snack and are filled with healthy fats to keep you nice and satisfied!




THE RECIPE:

yields: 10 bars

prep time: 10 min

total time (including cooling): 45 min

Ingredients:

2 tbsp melted coconut oil

1/4 cup maple syrup

1/3 cup creamy peanut butter

1/3 cup chocolate protein powder (I used @unicornsuperfoods )

1/4 cup cacao powder

2 tbsp coconut flour

A large pinch of salt

1/3 cup shredded coconut

1/3 cup chocolate chips

Instructions:

1. mix coconut oil, maple syrup, and peanut butter until smooth

2. add in choc protein powder, cacao powder, coconut flour, and salt

3. add in the coconut and chocolate chips, press into 8x8 pan and freeze for 30 min-1 hour (or until decently firm), slice into 12 thin bars, and enjoy!
