fudgy, melty, and filled with chocolate
THE RECIPE:
yields 12 brownies
prep time: 10 min
cook time: 40 min
total time (including cooling): 1 hr 10 min
ingredients
5 tbsp vegan butter (melted)
3/4 cup sugar
2 flax eggs (mix 2 tbsp flaxseed + 5 tbsp water, let sit for 5 min)
1 tsp vanilla
1/4 cup melted coconut oil
2/3 cup cocoa powder
1/2 cup gluten free all purpose flour
1/4 tsp baking soda
1/4 tsp salt
3/4 cup chocolate chips
bake 350 for 30 ish mins
instructions
1. preheat oven to 325 F and line or grease a 9x9 baking tin, set aside
2. in a large bowl whisk together the vegan butter and sugar until smooth. then mix in the flax eggs, vanilla, and coconut oil until smooth
3. stir in the cocoa powder, flour, baking soda, and salt. then stir in the chocolate chips
4. pour the mixture into the pan and bake at 325 F for 30 mins, then raise the heat to 350 F and cook for 10 more minutes. let cool for 20 min, then slice, and enjoy!
