these waffles are extremely light, fluffy, and absolutely AMAZING, especially when they’re topped with pb and syrup:)
THE RECIPE:
yields: 6-7 regular-sized waffles
prep time: 15 min
cook time: 15 min (approx 2-3 mins each)
total time (including cooling): 35 min
ingredients:
2 tbsp melted coconut oil
1/4 cup apple sauce
A dash of vanilla
1/2 tbsp maple syrup
3/4 cup + 2 tbsp non dairy milk
1/2 cup buckwheat flour
2 tbsp coconut flour
1 tsp baking powder
3-4 tbsp chocolate chips/blueberries/other ingredient to go in the waffles (optional)
instructions:
*heat your waffle maker and set aside
*in a small/medium bowl mix together the coconut oil, apple sauce, vanilla, maple syrup, and non dairy milk
*add in the buckwheat flour, coconut flour, and baking powder until combined
*lightly grease the waffle maker with oil and pour around 1/4 cup of the batter into the maker, optionally add in your chocolate chips or filling, and cook for 2-3 minutes or until your waffle maker signals it’s ready. repeat this until all of the waffles are done. add toppings: i used peanut butter, hemp seeds, maple syrup, and bananas and enjoy!
