Healthy Chocolate Chip Mini Muffins (vegan, gf, + nut free)

there’s a special place reserved in my heart for oat flour baked goods and these are no exception <3


these muffins are fluffy, flavorful, filled with melted chocolate, and everything that you could want in a snack or treat!


they’re also nut free for all my allergy friends, my heart goes out to you:)





THE RECIPE:

yields: 24 mini muffins

prep time: 10 min

cook time: 15 min

total time (including cooling): 35 min

ingredients:

1 flax/chia egg (1 tbsp ground flaxseed/whole chia seeds + 3 tbsp water, mix, and let sit for 5-10 min)

1/4 cup melted coconut oil (can sub other)

1 tsp vanilla

1/2 cup coconut sugar

1 tbsp maple syrup

1/3 cup apple sauce

1 1/2 cup gf oat flour (1 1/2 cup blended gf oats)

1/4 cup tapioca or arrowroot flour/starch

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1/2 cup chocolate chips

instructions:

*preheat oven to 350 F and grease a mini muffin tin, set aside

*in a large bowl mix together the flax/chia egg, coconut oil, vanilla, coconut sugar, maple syrup, and apple sauce until combined

*then add in the oat flour, tapioca starch, baking powder, baking soda, and salt. then mix in the chocolate chips

*divide the batter evenly amongst the tins and bake in the oven for 14-16 mins, let cool for 10 min, and enjoy!
