fluffy, extremely tasty, and sweetened solely w sweet potato, a few tbsp of maple syrup, and some rich chocolate chips :)
this loaf has the most amazing taste and texture. it may seem a lil sketchy to put sweet potato in bread? but it tastes v similar to banana bread except less banana flavor and more just subtle pleasurable sweetness
if you’ve ever wanted to try banana bread, but u absolutely loathe bananas (i don’t understand u but okay) then this is the recipe for u! or if ya just love a nice, easy heavenly loaf
THE RECIPE:
yields 7-9 ish slices
prep time: 15 min
cook time: 45 min
total time (including cooling): 1 hr 20 min
ingredients
1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, and let sit for 5 min)
1 cup sweet potato purée (prick a large sweet p w a fork and bake at 425 F for 45 mins, peel off skin and blend until smooth. 1 large sweet p=about 1 cup purée)
1/4 cup melted coconut oil
1/4 cup nut or seed butter (i rec almond, cashew, or sunflower)
1/4 cup non dairy milk
3 tbsp maple syrup
1 tsp vanilla
1 3/4 cup gf oat flour (1 3/4 cup blended gf oats)
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup chocolate chips
instructions
*preheat oven to 350 F and line a loaf tin, set aside
*in a large bowl mix together the flax egg, sweet potato purée, coconut oil, nut or seed butter, non dairy milk, maple syrup, and vanilla
*add in the oat flour, baking powder, baking soda, and salt. then stir in the chocolate chips
*pour the mixture into the loaf pan, sprinkle w more choc chips, bake for 45 min, let cool for 20, slice, and enjoy!
