Healthy Chocolate Peppermint Cookies (vegan, gf, nut free, w/ paleo option)

These HEALTHY CHOCOLATE PEPPERMINT COOKIES are seriously the perfect treat to get you into the Christmas spirit!





THE RECIPE:

yields: 14-16 cookies

prep time: 1o min

cook time: 11 min

total time (including cooling): 31 min

Ingredients:

1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, + let sit for 10 min)

1/4 cup coconut oil

1/2 cup coconut sugar

1 tsp vanilla

1 tsp peppermint extract

1 cup gf oat flour (1 cup blended gf oats, can sub almond flour for paleo)

1/3 cup cocoa powder

1/2 tsp salt

1/2 tsp baking soda

1/3 cup chocolate chips

For topping (optional):

2-4 crushed organic candy canes

1/3 cup vegan white/dark chocolate

1 tsp coconut oil

Instructions:

1. Preheat oven to 350 F and line or grease a baking sheet, set aside

2. In a large bowl mix together the flax egg, coconut oil, coconut sugar, vanilla, and peppermint extract

3. Then add in the oat flour, cocoa powder, salt, and baking soda

4. Then add in the chocolate chips and place the batter, using a small/medium cookie scoop (recipe makes 14-16) onto the baking sheet and bake in the oven for 11 minutes

5. For the topping: while the cookies are cooling melt together the chocolate and coconut oil in 30 second increments, mixing in between, until smooth

6. When the cookies are cool (abt 10 min) pour/dip the chocolate over half of the cookie and sprinkle with crushed candy canes, let sit until chocolate hardens, and enjoy!
