Healthy Chocolate Peppermint Cookies (vegan, gf, nut free, w paleo opt)

crisp on the outside, fudgy and chewy on the inside w tastes of melty choc peppermint throughout

simple and tasty w a quick cook and prep time!

definitely a great way to kick off the start of holiday recipes:)


yields: 11-12 cookies

prep time: 10 min

cook time: 11 min

total time (including cooling): 31 min


1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, + let sit for 10 min)

1/4 cup coconut oil

1/2 cup coconut sugar

1 tsp vanilla

1 tsp peppermint extract

1 cup gf oat flour (1 cup blended gf oats)/almond flour

1/3 cup cocoa powder

1/2 tsp salt

1/2 tsp baking soda

1/3 cup chocolate chips

optional toppings-

2-4 crushed organic candy canes

1/3 cup vegan white/dark chocolate (melted w 1 tsp coconut oil)


*preheat oven to 350 F and line or grease a baking sheet

*in a large bowl mix together the flax egg, coconut oil, coconut sugar, vanilla, and peppermint extract

*add in the oat flour, cocoa powder, salt, and baking soda. then add in the chocolate chips

*using a small/medium cookie scoop, place the dough evenly onto the baking sheet, bake in the oven for 11 minutes, let cool for 10, optionally add toppings, and enjoy!
