THE RECIPE:
yields 7-9 slices
prep time: 15 min
cook time: 1 hour
total time (including cooling): 1 hour 40 min
ingredients
for the bread-
1/4 cup melted coconut oil
3 large mashed bananas
1/3 cup nut or seed butter (i rec almond, cashew, or sunflower)
1/3 cup coconut sugar
1/4 cup non dairy milk
1 tsp vanilla
2 cups gf oat flour (2 cups blended gf oats)
1 1/2 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp salt
for the crumble topping-
2 tbsp solid coconut oil
3 tbsp coconut sugar
1 tsp cinnamon
1/3 cup gf oat flour (1/3 cup blended gf oats)
instructions
*preheat oven to 350 F and line a loaf pan, set aside
*for the bread- in a large bowl mix together the coconut oil, bananas, nut or seed butter, coconut sugar, non dairy milk, and vanilla
*add in the oat flour, baking powder, baking soda, cinnamon, and salt. pour the batter into the pan and set aside
*for the crumble topping- in a small bowl, using your hands to evenly break up and combine the mixture, crumble together the coconut oil, coconut sugar, cinnamon, and oat flour. spread the mixture evenly across the top of the loaf and bake in the oven for 1 hour, let cool for 25 min, slice, and enjoy!
