it’s gooey caramel and peanuts covered in white chocolate:) yea so basically a dream come true
THE RECIPE:
yields: about 13 candies
prep time: 15 min
total time (including cooling): 45 min
ingredients:
for the peanut caramel mixture-
1/4 cup melted coconut oil
1/4 cup peanut butter (sub cashew or almond for paleo)
1/4 cup coconut sugar
a large pinch salt
a dash of vanilla (optional)
1 cup peanuts (can sub cashews or other nut for paleo)
for the coating-
1/2 cup + 2 tbsp white chocolate chips (can also do dark choc or half white and half dark)
2 tbsp coconut oil
instructions:
*line a baking sheet with parchment paper and set aside.
*for the peanut caramel mixture- in a medium bowl mix together the coconut oil, peanut butter, coconut sugar, salt, and vanilla. then add in the peanuts and place in the freezer for 10 ish mins or until the coconut oil has begun to solidify (if you accidentally freeze it too much, place the bowl in the microwave for 15 sec)
*stir the mixture so it breaks up again (it should be thick, but moveable) and form abt 1.5 tbsp of it into a clump and place onto the cookie sheet. repeat for the rest of the mixture and freeze for 15-20 min.
*for the coating- in the microwave in 30 second increments, mixing in between, melt together the white/dark chocolate chips and coconut oil until smooth. dunk each pb caramel candy into the chocolate, tapping the excess off with a fork, and place back onto the baking sheet. repeat for the rest of the claws and freeze for 10-15 min, optionally top w salt, and enjoy!
