These bars are extremely simple, vegan, gf, with a nut free option, refined sugar free, and taste like the chewiest oatmeal choc chip cookie ever!
The dark chocolate in them complements the salt perfectly and the edges get all nice and golden brown:)
THE RECIPE
yields: 9 bars
prep time: 10 minutes
cook time: 20 minutes
total time (including cooling): 25 minutes
Ingredients:
1 flax egg
1/3 cup melted coconut oil
1/4 cup creamy peanut butter (or can sub any nut/nut free butter, like@kweenandcogranola butter or sunflower)
1/2 cup coconut sugar
1 tsp vanilla
2 1/2 tbsp maple syrup
1 cup gf rolled oats
1/4 cup cacao powder
3/4 cup gf oat flour (3/4 cup blended gf oats)
1 tsp baking soda
1 tsp salt
1/2 cup dark chocolate chips
Instructions:
1. Preheat oven to 350 F and spray an 8x8 baking tray
2. In a medium bowl combine the flax egg, coconut oil, peanut butter, coconut sugar, vanilla, and maple syrup
3. Then add in the rolled oats, cacao powder, oat flour, baking soda and salt. Then combine with the chocolate chips
4. Spread the batter evenly into the tray and bake in the oven for 19-20 minutes. Sprinkle with some sea salt and more chocolate chips, let cool for 15, cut into 9 squares, and enjoy!!
