Healthy no-bake Maple Seed Cookies (vegan, gf, + nut free)

these cookies are super simple, quick, and are the perfect satisfying snack, packed w/ healthy fats and fiber rich carbs:)


these were definitely inspired by one of my fav go macro bars and they’re so dang good!! the maple sea salt, iykyk




THE RECIPE:

yields: 15-18 cookies

prep time: 10 min

total time (including cooling): 25 min

Ingredients:

1/4 cup melted coconut oil

a dash of vanilla

1-2 tbsp coconut sugar (depending on how sweet you want them to be)

1/4 cup maple syrup

1 3/4 cup gf oat flour (1 3/4 cup blended gf oats)

1 tsp salt

2 tbsp pumpkin seeds (can sub chopped nuts or other if not nut free, I recommend smaller/chopped nuts/seeds)

2 tbsp hemp seeds (can sub other)

2 tbsp sunflower seeds (can sub other)

Instructions:

*mix together the melted coconut oil, vanilla, coconut sugar, and maple syrup

*add in the oat flour and salt. then mix in the nuts until combined

*use 1-2 tbsp of dough to form a small cookie shape and place it on a lined plate / cookie sheet, place in freezer for about 10-15 min, and enjoy! (store in fridge or at room temp, can sprinkle extra sea salt on top if desired)
