These Healthy Oatmeal Apple Cinnamon Cookies are gluten free, vegan, & nut free with a chewy center and pair perfectly with a nice glass of non dairy milk!!
THE RECIPE yields: 18-20 cookies

Ingredients:
1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, + let sit for 10 min)
1/4 cup melted coconut oil
1/3 cup coconut sugar
1/4 cup maple syrup
1 tsp vanilla
1 cup gf oat flour (1 cup blended gf oats)
3/4 cup gf oats
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp salt
1 medium apple (chopped into small pieces)
Instructions:
1. Preheat the oven to 350 F and line or grease two baking sheets, set aside.
2. In a large bowl mix together the flax egg, coconut oil, coconut sugar, maple syrup, and vanilla.
3. Then mix in the oat flour, oats, baking soda, cinnamon, and salt. Then add in the chopped apple.
4. With a small/medium cookie scoop place the batter onto the baking sheets (recipe makes 18-20 cookies) and bake for 11-12 minutes, let cool for 10, and enjoy!
