Healthy Oatmeal Trail Mix Cookies (vegan, gf, + nut free opt)

like the chewiest oatmeal cookie you could imagine, except w crunchy oven-roasted nuts, tangy cranberries, and an insane amount of choc chips


if my love for these isn’t already evident enough, i love them almost as much as i love lana del rey and that’s REALLY saying something





THE RECIPE:

yields: approx. 15 cookies

prep time: 10 min

cook time: 11 min

total time (including cooling): 31 min

ingredients:

1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, and let sit for 10 min)

1/4 cup melted coconut oil

1/4 cup nut or seed butter

1/3 cup coconut sugar

2 tbsp maple/date syrup

1 tsp vanilla

1 cup gf oat flour (1 cup blended gf oats)

3/4 cup gf rolled oats

1 tsp baking soda

1 tsp salt

1/2 cup chocolate chips/JOJO’s original choc (use link in bio and code KAYLEE10 for 10% off)

2 tbsp sunflower/pumpkin seeds

3-4 tbsp dried cranberries

3-4 tbsp chopped nuts (i used almonds & cashews but you can use whatever u prefer, sub more seeds for nut free)

instructions:

*preheat oven to 350 F and line or grease 2 baking sheets, set aside

*in a large bowl mix together the flax egg, coconut oil, nut or seed butter, coconut sugar, maple/date syrup, and vanilla.

*add in the oat flour, rolled oats, baking soda, and salt. then add in the chocolate chips, sunflower seeds, dried cranberries, and chopped nuts.

*using a medium cookie scoop, place the dough evenly onto the cookie sheets and bake for 11-12 min, let cool for 10, and enjoy!
