Healthy Peppermint kiss blossoms (vegan opt, paleo opt, + nut free)

These Peppermint Kiss Thumbprint Cookies are delicious, healthy, and nut free!🎄🍪 and with an alternate for the chocolate on top, they can be paleo and vegan too!





THE RECIPE:

yields: 9-10 cookies

prep time: 10 min

cook time: 10 min

total time (including cooling): 30 min

Ingredients:

2 tbsp melted coconut oil

1/4 cup coconut sugar

1/4 cup maple syrup

1/2 tsp peppermint extract

1/2 tsp vanilla

1/2 cup coconut flour

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 tbsp tapioca starch

10-12 peppermint kisses (sub vegan white/peppermint choc for vegan/paleo)

Instructions:

1. Preheat the oven to 350 F and line or grease a baking sheet

2. In a large bowl mix together the coconut oil, coconut sugar, maple syrup, peppermint extract, and vanilla

3. Then add in the coconut flour, baking soda, baking powder, salt, and starch

4. Roll the dough into small balls and slightly flatten with your hand (making a thumb print mark in the top of each cookie) and bake in the oven for 9-10 mins, unwrap each peppermint kiss and place on top of each cookie, let cool and harden for 10 mins, + enjoy!
