Healthy Pumpkin Muffin Tops (vegan, gf, + nut free)

These HEALTHY PUMPKIN MUFFIN TOPS are extremely soft, fluffy, chewy, + they’re the perfect thing to get you into the fall spirit!!




THE RECIPE

yields: 15-17 cookies

prep time: 10 min

cook time: 12 min

total time (including cooling): 32 min

Ingredients:

1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, + let sit for 10 minutes)

1/3 cup maple syrup

2/3 cup coconut sugar

2/3 cup pumpkin purée

2 tsp vanilla

1 cup gf oat flour (1 cup blended gf oats)

1/2 tsp baking soda

1 tsp salt

1/2 tbsp pumpkin pie spice

1/2 cup dark chocolate chips

Instructions:

1. Preheat oven to 350 F and line or grease two baking sheets, set aside

2. Mix flax egg, maple syrup, pumpkin purée, and vanilla

3. Add in the oat flour, baking soda, salt, and pumpkin pie spice. Then add in the chocolate chips

4. Take a small cookie scoop and place balls about 1 1/2 inches from each other on the baking sheet

5. Bake in the oven for 12 minutes, let cool for 10, and enjoy!
