Healthy Vegan Funfetti Cookies (gf + nut free opt)

These cookies are soft and buttery (without even having butter in them:)) and you should basically just make them right now!!




THE RECIPE:

yields: 12-15 cookies

prep time: 10 min

cook time: 10 min

total time (including cooling): 30 min

Ingredients:

1 flax egg (or regular egg)

3 tbsp melted coconut oil

3 tbsp almond butter (other nut or seed *for nut free* butters work too, I love the @kweenandco granola butters for nut free!)

1/2 cup coconut sugar

1 tsp vanilla

1 cup blanched almond flour (can sub 1 cup gf oat flour/ 1 cup blended gf oats)

1/2 tsp salt

1/2 tsp baking soda

2 tbsp coconut flour

1/4-1/3 cup organic sprinkles

Instructions:

1. Preheat oven to 350 F and prepare a baking sheet, set aside

2. In a large bowl, mix together your flax egg, coconut oil, almond butter, coconut sugar, and vanilla extract

3. Next, stir in your almond flour, salt, baking soda, and coconut flour. Once combined, add in your organic sprinkles

4. Roll the dough into balls and give them a light tap on top, bake them in the oven for 10-12 minutes. Let cool for 10 minutes, remove from the baking sheet, and enjoy!
