Matcha Cake Pop Balls (vegan + paleo)

everything you love abt a nice matcha latte but cakier, doughier, and covered in chocolate


these are also extremely easy and can be ready in less than 30 mins. the nice lil superfood energy boost that they provide is a certain plus as well:)





THE RECIPE:

yields: 12 balls

prep time: 10 min

freeze time: 25 min

total time (including cooling): 35 min

ingredients

for the cake pops-

6 tbsp matcha almond butter (i used @sarais.us , can use normal almond butter and 1 tsp matcha powder)

a dash of vanilla

1/4 cup maple syrup

2 tbsp coconut sugar

a pinch of salt

1/2 cup almond flour

1/4 cup coconut flour

for the coating-

1/3 cup chocolate chips

1 1/2 tbsp coconut oil

instructions

*line a cookie sheet with parchment paper and set aside

*for the cake pops- in a large bowl mix together the almond butter, vanilla, maple syrup, coconut sugar, salt, almond flour, and coconut flour until thick and combined

*roll the dough into about 1 tbsp balls and place on the cookie sheet. freeze for 10 min

*for the coating- in the microwave in 30 second increments, mixing in between, melt together the chocolate chips and coconut oil until smooth. remove the balls from the freezer and dunk each into the chocolate, tapping off the excess with a fork. place in the freezer for another 15 min and enjoy!
