Come on, a millionaire shortbread bar, but reverse?! These are so quick, easy, decadent, & delicious... you will literally be in absolute heaven.
To make these vegan... get yourself some vegan white chocolate, same with paleo!!
THE RECIPE

total time: 25 minutes
Ingredients: For the chocolate shortbread crust: 1/4 cup melted coconut oil 1/4 cup maple syrup 1/2 cup cacao powder 1 1/2 cups blanched almond flour For the peanut caramel layer: 5-6 dates (soaked in hot water for 5-10 minutes and drained) 3 tbsp creamy peanut butter For the white chocolate topping: 1/2 cup white chocolate chips 1-2 tbsp coconut oil Instructions: 1. In a large bowl combine the coconut oil, maple syrup, cacao powder, and almond flour until combined. Press the dough into a lined 8x8 pan and set aside!! 2. Soak your dates, then combine the peanut butter and dates in a food processor/ blender until smooth and spread evenly over the shortbread layer. Place the pan in the freezer to chill until the chocolate topping is ready❄️ 3. Melt together the white chocolate and coconut oil in 30 second increments, stirring in between until smooth and melted and coat above the date caramel layer. Put back in the freezer to chill for 10 minutes 4. Take out the pan and remove the bars, then cut them into 12/16 squares and enjoy!!
