Pumpkin Bread Mug Cake (vegan, gf, nut free, + single serve)

an extremely simple and delicious treat that can be urs in 10 mins or less



THE RECIPE:

yields 1 mug cake

prep time: 5 min

cook time 5 min

total time (including cooling): 12 min

ingredients

1/4 cup pumpkin purée

1 tbsp maple syrup/date syrup/honey

1 tsp coconut sugar

2 tbsp non dairy milk

a dash of vanilla

1/4 cup gf oat flour (1/4 cup blended gf oats)

1/2 tsp baking powder

1/4 tsp pumpkin pie spice

a sprinkle of salt

2 tbsp chocolate chips

instructions

*mix all ingredients together in a mug and cook in the microwave for about 5 min, let cool for a few minutes, top with more chocolate chips/ice cream, and enjoy!
