Single Serve Apple Crisp (vegan, gf, + nut free)

warm and unreal when topped with ice cream!




THE RECIPE:

yields 1 serving

prep time: 5 min

cook time: 25 min

total time (including cooling): 35 min

ingredients

for the bottom-

1/2 apple chopped

a dash of cinnamon

for the crisp topping-

1/2 tbsp coconut oil (cold or room temp, not melted)

1 1/2 tbsp maple syrup

1/2 tbsp nut or seed butter

a dash of vanilla

a pinch of salt

a dash of cinnamon

a pinch of baking soda

a pinch of baking powder

2 tbsp gf oat flour (2 tbsp blended gf oats)

2 tbsp gf oats

instructions

* for the apple bottom- preheat oven to 350 F and in a ramekin/oven safe mug mix together the chopped apples and cinnamon. place in the microwave for one minute then set aside

*for the crisp top- in a small bowl mix together the coconut oil, maple syrup, nut or seed butter, vanilla, salt, cinnamon, baking soda, baking powder, oat flour, and oats until combined. place the topping on top of the apple mixture, bake in the oven for 25-30 min, let cool for 5, preferably top with vanilla ice cream, and enjoy!
