their cacao brown rice crisp cereal that i used for the topping makes the texture u n r e a l and literally taste like a crunch bar layered on chocolatey cookie dough heaven
THE RECIPE:
yields: 12 bars
prep time: 15 min
freeze time: 35 min
total time (including freezing): 50 min
ingredients
for the cookie dough base-
1/4 cup melted coconut oil
1/4 cup maple syrup
1/4 cup creamy or crunchy nut or seed butter
1 tsp vanilla
1 cup almond flour (can sub 1 cup gf oat flour/1 cup blended gf oats)
1/3 cup cacao/cocoa powder
1/4 cup coconut flour
1/2 tsp salt
1/2 cup chocolate chips
for the chocolate crunch topping-
2 tbsp coconut oil
1/2 cup chocolate chips
2 tbsp nut or seed butter

instructions
*line a 9x9 baking sheet and set aside
*for the cookie dough base- in a large bowl mix together the coconut oil, maple syrup, nut or seed butter, and vanilla
*add in the almond flour, cacao powder, coconut flour, and salt. then add in the chocolate chips and spread the dough evenly into the pan. place in the freezer
*for the chocolate crunch topping- in a small bowl, in the microwave in 30 second increments (mixing in between), melt together the coconut oil and chocolate chips until smooth. stir in the nut or seed butter and then the cacao cereal. spread the mixture evenly over the cookie dough and freeze for 30 ish minutes, slice, and enjoy! (store in fridge or freezer)
