Vanilla Protein Donuts (vegan, gf, + nut free)

these donuts are FLUFFY and they’re packed with protein and healthy fats to keep you satisfied!!






THE RECIPE:

yields: 6 donuts

prep time: 10 min

cook time: 27 min

total time (including cooling): 1 hr

ingredients:

for the donuts-

3 flax eggs (3 tbsp ground flaxseed + 9 tbsp water, mix, and let sit for 5 min)

1/4 cup melted coconut oil

1/3 cup coconut sugar

1/4 cup maple syrup

1/4 cup non dairy milk

1 tsp vanilla

1/2 cup coconut flour

1/3 cup protein powder

1 tsp baking soda

1/2 tsp salt

for the glaze-

1/3 cup chocolate chips

1 tbsp coconut oil

(optionally top with sprinkles)

instructions:

*preheat oven to 350 F and grease a donut pan, set aside

*for the donuts- in a large bowl mix together the flax eggs, coconut oil, coconut sugar, maple syrup, non dairy milk, and vanilla

*add in the coconut flour, protein powder, baking soda, and salt until combined

*spoon the dough evenly into the pans and bake for 26-27 mins and let cool for 20

*for the glaze- while the donuts are cooling, melt together the chocolate chips and coconut oil in the microwave in 30 sec increments, mixing in between, until smooth. dip each donut bottoms first into the chocolate until the top is completely coated, top with sprinkles, and enjoy!
