This Vegan Gluten Free Cookie Skillet is amazingly melty and decadent and tastes like a pazookie! Don’t sleep on this one folks!
This baby is AMAZING and if you couldn't already tell I'm a sucker for a good oat flour baked good, they just have something about them that makes them so good, but dense + fluffy at the same time!
THE RECIPE: yields: 8 ish people (but keep in mind my 2 friends can finish this in one sitting so it depends) <3
prep time: 10 min
cook time: 28 min
total time (including cooling): about 55 minutes
Ingredients:
1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, + let sit for 10 min)
1/4 cup melted coconut oil
1/4 cup cashew butter (can sub other nut or nut free butter)
1/2 cup coconut sugar
2 tbsp maple syrup
1 tsp vanilla
1/3 cup milk of choice
1 1/4 cup gf oat flour (1 1/4 cup blended gf oats)
1 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1/2 cup chocolate chips
Instructions:
1. Preheat oven to 350 F and grease a 9x9 circular pan, set aside
2. In a large bowl mix together the flax egg, coconut oil, cashew butter, coconut sugar, maple syrup, vanilla, and milk of choice
3. Add in the oat flour, baking soda, salt, and baking powder. Then add in the chocolate chips.
4. Pour the batter into the pan, top with a few more chocolate chips, bake for 27-29 minutes and let cool for 15, top with a sprinkle of sea salt and non dairy vanilla ice cream of your choice, and enjoy!
