Vegan Pumpkin French Toast (gf, paleo opt, + nut free)

I’m ~obsessed~ with the flavors in this, it tastes like pure fall! It’s also nut free and has a paleo option if you use paleo bread, hope u enjoy!








THE RECIPE

yields: 5-6 pieces

prep time: 10 min

cook time: 10 min

total time: 20 min

Ingredients:

1/2 tbsp ground flaxseed (or ground chia seed)

1/4 cup pumpkin purée

1/2 cup non dairy milk

1 tsp pumpkin pie spice

1/2 tbsp maple syrup

5-6 pieces bread (vegan, gluten free, paleo-if necessary)

1/2-1 tbsp coconut oil

Instructions:

1. In a shallow bowl mix together the flaxseed, pumpkin, non dairy milk, pumpkin pie spice, and maple syrup

2. In a pan, over medium heat, melt the coconut oil as you dunk two pieces of the bread at a time into the mixture and soak both sides thoroughly. Then place each piece onto the pan and cook until golden brown (about 2 ish minutes on each side) and repeat until you’ve done all of the pieces)

3. Place on a plate and serve with more maple syrup, bananas, fruit, peanut butter, powdered sugar, or whatever your heart desires!
